Viennese Kaiserschmarren

Ingredients for 3 servings:

  • 250 g flour
  • 375 ml milk
  • 4 eggs, separated
  • 3 tbsp sugar
  • 100 g raisins
  • 1 pinch of salt
  • oil
  • powdered sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Mix the salt, 2 tablespoons of sugar, the egg yolk, and the milk with a hand mixer. Then gradually add the flour. Beat the egg whites until stiff, sprinkle in the remaining sugar, and carefully fold them into the batter. Rinse the raisins briefly beforehand (this will make them a little softer) before adding them to the batter. Heat the oil in a non-stick pan and pour in the batter. Let the batter cook for a while. Before it sets completely, tear it into small pieces in the pan. Turn the small pieces over until they are golden brown all over. Remove the Kaiserschmarren from the pan and sprinkle with powdered sugar.
