Asparagus farmer's toast

Ingredients for 4 servings:

  • 600 g asparagus
  • 250 g bratwurst, fried
  • 125 g Allgäu cheese, grated
  • 2 eggs, separated
  • 4 slices of brown bread
  • Butter for spreading the bread
  • salt and pepper
  • 1 bunch of parsley

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Peel and halve the asparagus, cook in boiling salted water until crisp, and drain well on kitchen paper. Finely dice the fried sausages and cheese. Beat the egg whites until stiff, fold in the egg yolks, season with salt and pepper, and add the cheese. Toast the slices of brown bread, spread with butter, arrange the asparagus on top, top with the sausages, and cover with the egg and cheese mixture. Bake in a preheated oven at 250°C for approximately 7-10 minutes. Sprinkle with chopped parsley and serve hot.
