Breaded cheese spaetzle

Ingredients for 6 servings:

  • 500 g flour
  • 5 eggs
  • 100 ml water
  • 1 tsp salt
  • 50 g butter
  • 100 g cheese (Emmental and mountain cheese), grated
  • ½ tsp black pepper, ground
  • Butter, melted
  • n. B. Flour
  • 1 egg(s), beaten
  • e.g. breadcrumbs

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Place all ingredients in a bowl and make spaetzle dough. Whisk vigorously until the dough bubbles. Bring a pot of water, a pinch of salt, and 1 tablespoon of oil to a boil and scrape the spaetzle into the water on a board with a perforated insert and a spatula. Bring to a boil briefly, then remove from the heat and place in a bowl with melted butter and the grated cheese. Mix everything together with a slotted spoon and season with a pinch of black pepper and salt, if desired. Arrange the cheese spaetzle on flat plates or baking dishes and allow to cool. Then turn the spaetzle out onto a flat surface. Then coat in flour like a schnitzel and coat with egg and breadcrumbs. Fry in hot fat until golden brown. Serve with fresh endive salad. Tip: It’s best to use a flat spoon to turn the spaetzle so that everything stays in its shape.
