Ingredients for 4 servings:
- 100 g spinach, either thawed frozen spinach or cleaned, blanched, chopped fresh
- 250 g flour
- 4 eggs
- n. B. Salt
- n. B. Nutmeg
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes

Mix all ingredients until smooth. Bring a pot of boiling salted water to the boil. Add the dough in portions using a spaetzle slicer (if you don’t have one, spread the dough thinly on a board and scrape thin strips into the water with a knife). Let it sit for a few minutes. The spaetzle are ready when they float to the surface. A cheese sauce goes very well with them.
