Cheese spaetzle

Ingredients for 4 servings:

  • 500 g flour
  • 5 eggs
  • 2 tsp salt
  • 400 g grated cheese, hearty such as mountain cheese or Emmental
  • 100 g butter
  • 2 onions
  • salt and pepper

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

Swabian specialty

Beat the flour, eggs, and salt into a tough dough until bubbly. Then fry the diced onions in some of the butter. Gently heat the remaining butter; do not brown it. Now, using a spaetzle grater or a small board, push the dough into plenty of boiling salted water. Remove the spaetzle from the water only after it has come to the boil. Now, alternate layers of spaetzle and cheese in a bowl. Finally, grease with the heated butter, cover, and let stand for about 3 minutes. Season again with salt and pepper, and stir briefly with a wooden spoon. Serve immediately with the roasted onions on top, or return to the hot oven for a few more minutes.
