Chicken skewer with apricot curry dip

Ingredients for 4 servings:

  • 120 g apricot(s), dried
  • 120 ml orange juice
  • 10 g fresh ginger
  • 150 g yogurt
  • 50 g cashew nuts
  • 2 tbsp lemon juice
  • 100 g cream
  • 1 tsp curry powder
  • 1 tsp honey
  • 1 pinch of salt and pepper, freshly ground
  • 8 chicken breasts (100 g each)
  • 40 g clarified butter and Asian spice salt

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

Cut the apricots into small cubes and soak them in the orange juice for about 1-2 hours. Finely dice the ginger and add it to the apricots along with the remaining ingredients. Puree all ingredients with a hand blender until smooth. Cut the chicken breasts into approximately 3 cm cubes and place them on 8 wooden skewers. Season the skewers with Asian spice salt and fry in a pan with clarified butter until golden brown. Serve the fried chicken skewers with the apricot curry dip. Serve with risotto and a green salad.
