Allgäu cheese spaetzle with basil and wild garlic salt

Ingredients for 4 servings:

  • 4 eggs
  • 600 g flour
  • ½ liter of milk
  • Salt wild garlic-)
  • 1 handful of basil
  • 150 g butter
  • 300 g cheese (Emmental), grated
  • 4 onions

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Make the dough from eggs, flour, milk, wild garlic salt, and finely chopped fresh basil. Grate portions into boiling water using a spaetzle grater. When the spaetzle float to the top, remove them with a slotted spoon and layer them with the cheese in a baking dish. Then bake in a preheated oven at 180°C for 5 minutes. In the meantime, slice the onions and brown them in butter. Sprinkle them over the finished spaetzle later. Note: Instead of the wild garlic salt, you can also use regular salt and 1 teaspoon of finely chopped wild garlic.
