Blueberry Buttermilk Drink

Ingredients for 4 servings:

  • 400 g blueberries
  • 2 tbsp lemon juice
  • 1 ½ tbsp powdered sugar
  • 2 tbsp blackcurrant
  • 1 liter buttermilk
  • 2 tbsp liquid honey, e.g. acacia honey
  • 1 tbsp lemon zest, grated

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Bring 200g of blueberries to a boil in a small saucepan with lemon juice, powdered sugar, and blackcurrant. Simmer over low heat for 4 minutes. Strain through a fine sieve and squeeze out as much juice as possible. Add the remaining blueberries and let cool. Whisk the buttermilk with honey and lemon zest until smooth and stir into the cold blueberry compote. Pour into 4 tall glasses and serve chilled.
