Ingredients for 5 servings:
- 2,000 g flour (wheat flour)
- 21 g salt
- 270 g oil (vegetable oil)
- 317 g yeast
- 830 g water, milk
- 250 g sugar
Instructions
Working time approx. 30 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 30 minutes
Knead together 1250g wheat flour, salt, 67g yeast and the water/milk, then slowly add 20g oil and knead well again. Let the whole thing rest in the bowl for about 15 minutes. After the resting time, add the sugar, 250g yeast and 750g wheat flour and knead. Now slowly knead in the 250g oil. Then shape the dough into 5 small balls of 750g each and let it rest for about 15 minutes. Now shape the balls into Weckmänner (pretzels), brush with egg and leave them in a warm place for about 10 minutes. Bake the whole thing at about 220°C until golden brown. TIP for the egg coating: It’s best to mix an egg yolk, a little water, sugar and salt and brush the Weckmänner (pretzels) with the egg mixture.
