Mustard – eggs, sweet – sour

Ingredients for 6 servings:

  • 15 eggs
  • 100 g flour
  • 50 g margarine
  • 7 tbsp mustard
  • spice(s) as required
  • 5 tbsp sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Boil the eggs for just 2 minutes. Then rinse and peel. Mix the mustard with the water, salt, and sugar (to make about 1 liter or more. The eggs should be covered later). Heat a pan, melt the margarine, and stir in the flour. Let everything turn golden yellow, then add the mustard sauce, stirring vigorously and constantly, until a creamy sauce forms. Let it simmer gently. Add the eggs and cook over low heat for 5 minutes. Add herbs if desired. If you prepare everything the evening before, the eggs will marinate particularly well. Serve with boiled potatoes or simply bread (hot or cold).
