Ingredients for 4 servings:

  • 1 kg beef, tripe if desired
  • 1 liter of water
  • Allspice
  • Bay leaf
  • Salt

The beef is boiled in a pot of water until slightly cooked. Then, the meat is removed and, if present, boned. Cut the meat into small cubes and return it to the broth. Season with a little salt, allspice berries, and a bay leaf. Reduce the broth over low heat until it has reduced considerably. Serve with white bread or boiled potatoes. If there is any leftover, it can be placed in a suitable earthenware pot. Once cooled, it will make a kind of corned beef.
