Sweet and sour spare ribs

Ingredients for 4 servings:

  • 750 g pork ribs
  • 2 tbsp sunflower oil
  • 5 tbsp brown sugar
  • 1 tbsp fish sauce
  • 2 tbsp soy sauce
  • 1 tbsp balsamic vinegar
  • 2 tbsp vinegar
  • 300 ml chicken broth
  • 1 slice(s) ginger root
  • 2 star anise
  • 3 chili peppers, dried and soaked
  • 1 tsp salt

Working time approx. 10 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour

very easy to prepare

Cut the pork ribs apart and cook for about 10 minutes. Remove and rinse with cold water. Heat the oil in a wok or pan. Add the sugar and let it caramelize. Then add the cooked ribs and mix everything well. Add the soy sauce, fish sauce, balsamic vinegar, table vinegar, chicken stock, chili, salt, ginger, and star anise and simmer covered for 30 minutes over low to medium heat. After 30 minutes, skim off the fat from the sauce with a tablespoon. Then increase the heat and cook uncovered for about 10 minutes. Remove the ribs from the pan or wok. Serve with rice. I only prepare this amount for two people, as my husband and I are meat eaters.
