Rhenish onion soup

Ingredients for 4 servings:

  • 750 g onion(s)
  • 500 g potatoes
  • 750 ml meat broth
  • 1 bay leaf
  • 4 pieces of bratwurst, coarse
  • 2 tbsp vinegar (white wine vinegar)
  • Salt
  • Pepper, white, ground
  • 1 bunch of chives

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the onions and slice them into rings. Heat a little fat in a pan and sauté the onion rings. Peel the potatoes and dice them roughly. Add the potato cubes, meat broth, and bay leaf to the onions. Pierce the sausages several times with a fork and add them to the soup. Simmer for about 30 minutes. Remove the sausages and slice them. Season the soup with vinegar, salt, and pepper. Finely chop the chives and set aside 1 tablespoon. Add the remaining chives and sausage slices to the soup. Stir everything thoroughly and ladle into cups. Sprinkle with the remaining chives.
