Pineapple sauerkraut

Ingredients for 12 servings:

  • 3 cans of sauerkraut
  • 5 bay leaves
  • 6 peppercorns
  • some water
  • 250 g ham, chopped
  • 100 g bacon, fat
  • 3 large onions
  • 1 can pineapple, chopped
  • Vinegar
  • Sugar
  • Salt

Working time approx. 40 minutes; Total time approx. 40 minutes

Combine the sauerkraut, spices, and a little water in a large pot. Add the finely chopped ham (you can also use offcuts; we often find them pre-packaged at the butcher’s). Finely chop the fatty bacon and fry it lightly in a pan with the diced onions, then add it to the cabbage. Chop the pineapple pieces even smaller and add them to the other ingredients, possibly adding some of the juice to the cabbage. Let the whole thing simmer for a good hour and season with vinegar, sugar, and salt. Juicy smoked pork goes well with this.
