Almond Rum Cookies

Ingredients for 1 servings:

  • 2 eggs
  • 200 g sugar
  • 1 lemon(s), zest, grated
  • 2 tsp rum
  • 1 pinch of cinnamon
  • 175 g almond(s), ground
  • 200 g flour (wheat flour type 405)
  • 150 g powdered sugar
  • 1 tsp rum

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Christmas biscuits, makes about 45 pieces

Beat the eggs and sugar until frothy. Stir in the lemon zest, rum, cinnamon, and almonds. Add the flour and knead everything into a dough. Flatten the dough and chill for 1 hour. Then roll out the dough to a thickness of about 4-5 mm and cut out cookies. Place on a baking sheet lined with baking paper. Bake in a preheated oven at 200°C (top/bottom heat) for about 10-12 minutes. For the glaze: Mix the powdered sugar and rum. Brush the mixture over the completely cooled cookies.
