Cinnamon red cabbage with red wine

Ingredients for 6 servings:

  • 1 head of red cabbage, finely sliced
  • 500 ml red wine
  • 150 g brown sugar
  • 1 onion(s), sliced
  • 2 lemons, untreated, juice and zest
  • 2 bay leaves
  • 4 carnations
  • 4 tsp cinnamon
  • 4 apples, sour, pitted, sliced
  • 750 ml applesauce
  • 2 tbsp lard (goose fat)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook red cabbage, red wine, goose fat, onion, bay leaves, cloves, and finely chopped apples in a pot for about 1 hour. Add the lemon juice and grated zest, stir in the applesauce and cinnamon. Add more sugar and/or lemon juice if desired. Cook until the red cabbage is tender. It’s a great accompaniment to Christmas goose, roulades, goulash, game, etc.
