Ingredients for 4 servings:
- 1 jar red cabbage
- 30 g lard
- 1 small onion(s)
- 2 small apples
- 2 tbsp honey, liquid
- 6 carnations
- 2 bay leaves
- 2 juniper berries
- ½ stalk(s) cinnamon
- 500 ml broth
- Salt
- Black pepper, freshly ground
- 2 tsp cornstarch

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

First, remove some of the red cabbage liquid from the jar and set aside. Wash the apples, remove the cores, and dice the flesh. Peel the onion and stud it with the cloves. Heat the lard in a saucepan and sauté the apple cubes for 3-4 minutes. Add the honey to the apples and let it caramelize slightly – but be careful not to burn it. Now add the red cabbage, stir well, and season with salt and pepper. Deglaze the red cabbage with the broth, add the studded onion, bay leaves, juniper berries, and cinnamon, and simmer over low heat for 45 minutes. After 45 minutes, remove the spices and onion. Mix the cornstarch into the previously removed red cabbage liquid and use it to thicken the red cabbage. Season everything again with salt and pepper. Tip: If time permits, always prepare the cabbage the day before and reheat it the next day – it tastes even better.
