Ingredients for 1 servings:
- 3 eggs
- 65 g butter
- 100 g powdered sugar
- 1 packet of vanilla sugar
- 500 g quark (40%), alternatively low-fat quark or 20% quark
- 1 ½ packs of pudding powder
- Chocolate, 5 bars (dark chocolate with Calvados)
- 50 g raisins if needed
- 2 m.-sized apples
- some lemon juice
- Salt
- Fat for the mold
- Flour for the mold

Quick, delicious, cheesecake without a base – for a 23 cm springform pan
Line the bottom of a springform pan with baking paper, then grease and flour it thoroughly. Chop the chocolate bars into small pieces. Core and peel the apples, then dice them finely. Mix the diced apples with the raisins, drizzle with a little lemon juice, and refrigerate until ready to use. Separate the eggs, beat the egg whites with a pinch of salt until stiff peaks form, and refrigerate briefly. Beat the egg yolks with butter, powdered sugar, and vanilla sugar until frothy. Add the quark and pudding mix and mix well. Fold in the chopped chocolate and apple mixture, then lightly fold in the beaten egg whites. Pour everything into the prepared pan and smooth the surface. Bake in a preheated oven at 180°C (top/bottom heat) for about 50 minutes, reducing the temperature to 160°C for the last 10 minutes if necessary. Let stand in the switched-off oven for about 10 minutes, making sure the cake doesn’t overcook. Remove and let cool completely. Tip: If you can’t find Calvados chocolate, you can of course use other types.
