Ingredients for 4 servings:

  • 100 g butter
  • 60 g sugar
  • 1 pinch of salt
  • 2 eggs
  • 1 tbsp rum
  • 100 g cornstarch (Mondamin)
  • 250 g flour
  • 1 tsp baking powder
  • 1 lemon(s), grated peel
  • powdered sugar
  • Fat for frying, preferably clarified butter

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Cream the butter, sugar, grated lemon zest, and salt with the two eggs until fluffy. Add the rum. Then slowly add the Mondamin, flour, and baking powder and mix well. Let the dough rest for 30 minutes. Then, using 2 tablespoons, fry small balls in very hot oil until golden brown. Sprinkle the hot pastries with powdered sugar.
