Broccoli and rice cream soup

Ingredients for 4 servings:

  • 1 cup basmati rice
  • 2 onions
  • some oil for frying
  • 2 heads of broccoli
  • some oat cream (Oat Cream Cuisine)
  • e.g. salt and pepper
  • n. B. garlic

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

First, cook the basmati rice in twice the amount of water with a little salt until it is tender and has absorbed the water. Next, finely chop the onions and fry them in a little oil in a large pot. Also finely chop the broccoli and add it to the pot. Pour in warm water so that the vegetables are completely covered. Cook the vegetables for about 15 minutes. When the broccoli is tender, remove the pot from the heat and puree the vegetables with a hand blender until smooth. Add the cooked rice and the oat cream and continue blending until you have a creamy soup. Finally, season to taste.
