Ingredients for 2 servings:
- 250 g tagliatelle pasta
- 1 bunch of radishes
- some rosemary
- 1 handful of ground elder
- oil
- salt and pepper
- 2 tbsp cream cheese
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes
Cook the tagliatelle in salted water according to the package instructions. Meanwhile, finely chop the radishes. Chop the rosemary and ground elder. Sauté the radishes in a little oil. Season with salt and pepper. Stir in the chopped rosemary and 2 tablespoons of cream cheese. Finally, stir in the chopped ground elder and heat through. Mix with the pasta. Ground elder is a regional superfood that is often unfairly referred to as a weed. It makes itself known in the garden through its incredible strength and endurance. Ground elder sprouts from even the smallest remaining remnant of the plant. This strength is also reflected in its ingredients. Ground elder is richer in minerals and vitamins than kale, which is considered one of the most mineral- and vitamin-rich vegetables. Ground elder contains more vitamin C than most other leafy greens, as well as vitamin A and plenty of other minerals such as iron, magnesium, and calcium. Ground elder also has an exceptional flavor that will enhance any kitchen. It can be used in salads, like spinach or other leafy greens.
