Wild garlic and walnut butter

Ingredients for 1 servings:

  • 250 g butter, soft
  • 150 g wild garlic or less to taste
  • 100 g walnuts
  • 8 tbsp walnut oil, alternatively olive oil
  • 2 tbsp mustard
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the wild garlic thoroughly, pat dry, and trim the stems at the bottom. Roughly chop the leaves along with the walnuts. Purée the wild garlic and walnuts with the mustard and oil using a hand blender. In another bowl, whisk the butter until fluffy. Then, mix the wild garlic and walnut paste with the butter and season with salt and pepper. Tip: If you like, you can replace the wild garlic with arugula. And for the garlic fans among you, feel free to stir a freshly crushed garlic clove into the butter.
