Super delicious couscous salad

Ingredients for 1 servings:

  • 100 g couscous
  • Salt water or vegetable broth
  • 2 tomatoes
  • 1 clove(s) garlic
  • 1 avocado(s)
  • 2 tbsp yogurt or quark
  • salt and pepper
  • Maggi
  • Spice(s) of your choice
  • some lemon juice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

vegetarian and very quick to make

Prepare the couscous according to the package instructions using salted water or vegetable stock, if desired. Finely mash the avocado flesh with a fork. Finely dice the tomatoes and press the garlic clove. Add both to the avocado and drizzle with a generous squeeze of lemon juice. Add the yogurt and mix well to make guacamole. Season to taste with salt, pepper, Maggi, and other spices. Add the guacamole to the cooked couscous, season again to taste, and serve cold as a salad, e.g., with a barbecue, or as a warm dish.
