Pasta salad with apple, without mayonnaise

Ingredients for 10 servings:

  • 1 kg farfalle
  • 200 g pine nuts
  • 400 g tomatoes, dried in oil
  • 3 bell peppers, colored
  • 3 apples, peeled and pitted
  • 60 basil leaves
  • 100 ml olive oil
  • 4 garlic cloves
  • 400 g sheep’s cheese
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Cook the pasta according to the package instructions until al dente. In the meantime, chop the tomatoes, bell peppers, and apples, and dice the feta cheese. Peel, press, or finely chop the garlic. Gently toast the pine nuts in a dry pan. Be careful—they’ll turn black quickly! Tear or chop the basil leaves. Drain the cooked pasta and combine everything in a bowl. Drizzle with olive oil (this is an estimate) and season with salt and pepper. 765 kcal per serving.
