Fried egg on a bed of zucchini

Ingredients for 1 servings:

  • 1 m.-large zucchini
  • 2 m.-sized eggs
  • 2 slices of cooked ham
  • 4 m.-sized cocktail tomatoes
  • 1 large mushroom
  • 1 tsp, heaped Parmesan, freshly grated

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

First, slice the zucchini lengthwise. Lightly fry both halves in a pan with a little oil on both sides. Then place them on a plate, light side up, and wrap them in the cooked ham. Place in a preheated oven at 150°C (top/bottom heat) for about 20 minutes. Now chop the tomatoes and mushrooms and sauté them in a pan. Then crack two eggs into the pan. Remove the plate with the zucchini halves and add the vegetables. Place the two fried eggs on top of each half. Finally, sprinkle with some Parmesan cheese.
