Blueberry jam without sugar

Ingredients for 1 servings:

  • 180 g blueberries, frozen
  • 120 g soft dates
  • 4 tbsp orange juice, fresh, or water
  • some lemon zest

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Cut the dates into approximately 2 mm thin slices. Gently heat the frozen blueberries, fresh orange juice or water, and the dates in a saucepan. Do not let the mixture boil, as this will alter the flavor. Once the blueberries are cooked until soft, puree everything in a blender or with an immersion blender, adding a little zest from an untreated lemon (I use about 1/3 of a lemon). This may take a few minutes, depending on your food processor. Pour the still-hot jam into a prepared jar and refrigerate. The jam will set in the refrigerator and will keep for about 2 weeks. The ingredients make approximately 250 ml of jam. We serve this jam not only on bread, but also, for example, stirred into yogurt with fresh fruit. And I love using them in baking, for example, as a filling for my delicious sugar-free chocolate cake, my sugar-free shortbread cookies, or my sugar-free lemon cookies (you can find recipes on my profile). They can also be used to make a great frosting/cream for cakes, cupcakes, or desserts.
