Applesauce and mascarpone cream

Ingredients for 6 servings:

  • 500 g apples, already pitted and quartered
  • 70 g sugar
  • 1 tbsp, sautéed cinnamon
  • 1 tsp, levelled vanilla sugar
  • 40 g almond liqueur
  • 80 g amaretti biscuits
  • orange juice
  • 250 g mascarpone
  • 250 g cream cheese
  • 100 g whole milk
  • 1 tbsp, heaped vanilla sugar

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 9 minutes; Total time approx. 1 hour 24 minutes

Thermomix recipe

Put 4 amaretti biscuits into each of 6 glasses. I always use whiskey glasses. Crush the remaining biscuits for 8 seconds on speed 4 and transfer to a small bowl. Drizzle the amaretti biscuits in the glasses with a little orange juice. Put the apples, 40g sugar, and 1 level teaspoon of vanilla sugar into the Thermomix and cook for 9 minutes at 100°C on speed 1. Add the almond liqueur and puree for 20 seconds on speed 5. Pour into a bowl and let cool. Rinse the bowl. Put the mascarpone, quark, milk, the remaining 30g sugar, and the heaped tablespoon of vanilla sugar into the Thermomix and set speed 5 for 20 seconds. Once the applesauce has cooled completely, pour some into the glasses, top with some mascarpone cream, then some amaretti crumbs, then more applesauce, mascarpone cream, and finally more crumbs. Chill for at least 1 hour and then enjoy.
