Pomegranate chia pudding with orange

Ingredients for 1 servings:

  • ½ pomegranate, which corresponds to approx. 130 g pomegranate seeds
  • 10 g chia seeds
  • 1 tsp rose water
  • 1 pinch of ground cinnamon
  • 1 small orange(s)

Instructions

Working time approx. 20 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 20 minutes

Remove the seeds from half a pomegranate and puree in a blender. Strain the puree through a fine sieve, reserving the juice. Squeeze the puree well. This yields approximately 100 ml of pomegranate juice. Stir the chia seeds, cinnamon, and rose water into the pomegranate juice, cover, and let soak in the refrigerator (8 hours or overnight). After soaking, peel and segment the orange. Retain the juice. Set aside a nice orange segment for garnish. Cut the remaining orange segments into small pieces and fold them into the chia pudding along with the reserved orange juice. Garnish with the orange segment and serve.
