Ingredients for 6 servings:

  • 2 chicory
  • 2 orange(s), Spanish
  • 3 mandarins or clementines
  • 1 grapefruit(s)
  • 2 apples and other fruits, such as bananas, etc.
  • 1 lemon(s)
  • 50 g walnuts, as needed
  • 300 g raisins, as needed
  • 3 tbsp honey and/or sugar, as needed
  • 3 tbsp oil (walnut oil)
  • 30 ml cognac, if possible
  • 1 pinch of cinnamon
  • Carnation(s)
  • Ginger powder

Instructions

Working time approx. 45 minutes; Rest period approx. 1 day; Total time approx. 1 day 45 minutes

Fruit salad with chicory

Clean and wash the chicory, remove the bitterstem, and chop it finely. Then process all of the mentioned fruits and chop them finely. Pour over the lemon juice and thin it out with water if desired, but this is not absolutely necessary. Drizzle with honey and/or sugar and walnut oil, along with the finely chopped walnuts. Soak the raisins in cognac beforehand and then sprinkle them over the salad. If children are eating with you, omit the alcohol or sprinkle them individually over the salad. For a kick, add the spices mentioned above, but only a pinch full. Mix everything together well, and you can serve it immediately. It also tastes good if it stands for a while and infuses itself, and then you should only add the chicory just before serving. It is also suitable as a winter salad, without the typical Christmas spices.
