Spelt-wheat buttermilk bread without sourdough

Ingredients for 1 servings:

  • 250 g spelt flour (wholemeal)
  • 300 g wheat flour
  • 1 ½ packets of dry yeast
  • 500 ml buttermilk
  • 50 ml water
  • 2 tbsp sugar
  • 1 tbsp salt
  • 1 tbsp bread spice mix (as needed)

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 2 hours 30 minutes

The buttermilk should be at room temperature; if necessary, warm it briefly in the microwave. Make a dough from all the ingredients. Knead the dough thoroughly for 10 minutes using the dough hook. Then pour it into the baking pan and let it rise in a warm place for one hour. Place the pan in a warm water bath in the sink to rise. Briefly preheat the bread maker. Then score the top of the bread lengthwise about one centimeter deep with a sharp knife. Bake in the bread maker for one hour. For a nice crust, remove the bread from the pan after the hour of baking and lightly moisten it all over with a water sprayer (the same kind you use for plants). Then bake for another 10 minutes.
