Tomato soup with feta

Ingredients for 4 servings:

  • 1 kg tomatoes
  • 1 dash of cream
  • 100 g feta cheese
  • ½ bunch basil
  • vegetable broth
  • salt and pepper
  • olive oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the tomatoes and sauté them in olive oil. Deglaze with vegetable stock and simmer for about 10 minutes. Season with heavy cream, salt, and pepper. Purée the soup, crumble the feta cheese (not too finely) and stir in. Serve on plates and garnish with basil.
