Ingredients for 2 servings:

  • 125g mozzarella
  • 125 g cherry tomatoes
  • 1 small bunch of spring onions
  • 1 small bunch of parsley
  • 1 small bunch of chives
  • 1 small bunch of arugula
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar, lighter
  • 3 sprigs of oregano
  • 3 sprigs of thyme
  • some salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Total time approx. 25 minutes

Wash and halve the tomatoes. Drain the mozzarella, then halve. Wash and finely chop the oregano and thyme. Finely slice the spring onions. Wash the chives and finely chop them. Wash and roughly chop the arugula and parsley. Mix the oil, balsamic vinegar, oregano, and thyme to make a dressing and season with salt and pepper. Carefully combine the tomatoes, spring onions, mozzarella, arugula, parsley, and chives in a bowl. Pour the dressing over the salad and let it sit for a moment before serving.
