Wild garlic salt

Ingredients for 1 servings:

  • 100 g wild garlic, fresh
  • 500 g sea salt, coarse

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 17 minutes

Preparation with fresh wild garlic

Roughly chop the wild garlic leaves and briefly chop them in a food processor. Add the coarse sea salt and grind everything together finely in the food processor. Spread the moist salt flat on a tray or plate and let it dry overnight in a warm place, e.g., over a radiator. You can also let the salt dry in a slightly preheated oven (approx. 50°C) for 1-2 hours. The next morning, crumble the dried salt and fill jars. If the salt isn’t finely ground enough, grind it again in the food processor while it’s still dry. This salt has an intense green color and a wonderfully aromatic wild garlic scent.
