Ingredients for 4 servings:
- 450 g soup vegetables, consisting of celery, carrots, leeks and parsley, but without onions
- 100 g salt
- 50 ml water

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Chop the vegetables and place them in a pot with the salt and water. Simmer for about 15 minutes, until the vegetables are tender. Then puree the vegetables. Pour the hot mixture into jars, seal tightly, turn upside down, and let cool. Depending on your needs, the paste can be used either to make vegetable broth or as a seasoning for sauces. The listed ingredients represent a ratio that may need to be adjusted if more vegetables are used.
