Sunken Apple Pie

Ingredients for 12 servings:

  • 250 g butter
  • 250 g powdered sugar
  • 4 eggs
  • 300 g flour (whole flour, spelt or wheat)
  • 100 g hazelnuts or walnuts, grated
  • 1 tsp baking powder
  • 1 pinch of salt
  • some gingerbread spice
  • 1 tbsp rum
  • 5 large apples
  • 2 tbsp lemon juice
  • Powdered sugar, for sprinkling

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

aromatic wholemeal cake

Cream soft butter with sugar and a pinch of salt until fluffy. Beat in the eggs one at a time. Quickly stir in the flour mixed with the baking powder and nuts. Add a little gingerbread spice and rum, if desired. Peel and quarter the apples, and remove the cores. Score the curved side with the tines of a fork and drizzle with lemon juice. Preheat the oven to 190°C. Butter and flour a 26 cm springform pan. Pour the batter into the pan and smooth it down. Arrange the apple quarters on top, working from the outside inwards, and press them lightly into the batter. Bake the cake for approx. 60 minutes. Sprinkle with icing sugar and serve.
