Ingredients for 2 servings:

  • 500 g pumpkin(s), grated
  • 3 tbsp oil
  • ⅛ liter of water
  • 1 kg flour, whole wheat flour
  • 2 points yeast (dry yeast)
  • 1 tbsp salt
  • 60 g pumpkin seeds
  • 3 tbsp pumpkin seed oil
  • 450 ml water, lukewarm
  • 1 tbsp bread spice mix

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Sauté the pumpkin with the oil and 1/8 l water until soft, puree, and allow to cool. Mix all the dry ingredients, add the remaining ingredients and the pumpkin puree, and knead into a smooth dough. Let rise for about 30 minutes, then pour into two loaf pans, cover, and let rise again for about 30 minutes. Bake in a preheated oven with a container of water for one hour at 200°C. You can also put the bread in a cold oven; in this case, the second rising time is skipped and the baking time will be extended by about 15-20 minutes. After baking, remove the bread from the pan and brush with a mixture of 1 tablespoon of pumpkin seed oil and 4 tablespoons of hot water.
