Spaghetti with spinach sauce

Ingredients for 4 servings:

  • 400 g spaghetti or other pasta
  • 6 tomatoes, dried, in oil
  • 400 g spinach
  • 1 garlic clove(s)
  • 2 tbsp olive oil
  • 150 ml vegetable stock
  • salt and pepper
  • nutmeg
  • 3 tbsp sunflower seeds

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Cook the spaghetti in salted water according to the package instructions. Drain and dice the tomatoes. Roast the sunflower seeds in a dry pan. Peel and chop the garlic. Heat the oil in a saucepan. Sauté the garlic until translucent. Add the spinach and pour in the broth. Allow the spinach to wilt and sauté until soft. Purée with an immersion blender and season with salt, pepper, and nutmeg. Combine the pasta with the spinach sauce and tomatoes. Sprinkle with the sunflower seeds.
