Low-carb Swiss roll with berries

Ingredients for 4 servings:

  • 4 eggs
  • 1 pinch of salt
  • 50 g xylitol (sugar substitute) or liquid sweetener
  • 2 tbsp buttermilk
  • 1 dashes lemon juice or lime juice
  • 80 g almond flour
  • 1 tsp baking powder
  • 150 ml cream
  • 100 g cream cheese
  • 100 g berries (blackberries, raspberries, strawberries, frozen)
  • e.g. xylitol (sugar substitute) or liquid sweetener

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 45 minutes

Preheat the oven to 170°C (top/bottom heat). Beat the eggs until creamy. Add the buttermilk and season with Xucker and lemon. Now add the remaining ingredients and mix everything well. Line a baking sheet with baking paper and spread the mixture on it. Smooth the dough and place in the oven for 15 minutes. Then let the base cool slightly. For the filling, whip the cream until stiff peaks form, then carefully stir in the cream cheese and Xucker. Heat the frozen berries in the microwave and flatten them with a spoon or puree them with a blender. Sweeten to taste, if desired. Spread the cream on the base, then the berries, and roll up. Refrigerate for at least one hour.
