Ingredients for 1 servings:
- 30 g chia seeds
- 10 g cocoa powder, slightly defatted
- 10 g xylitol (sugar substitute)
- 20 g almond flour, defatted
- 20 g flour (pumpkin seed flour), defatted
- 20 g hazelnuts, ground
- 30 g protein powder, sweet, with chocolate, vanilla or cream flavor
- 50 g quark
- 50 ml water
- Psyllium husks
- sesame

Mix about 2-3 tablespoons each of psyllium husk and sesame seeds in a shallow bowl and set aside. Dilute the quark with the water and stir until smooth. Weigh all the dry ingredients, except the psyllium husk and sesame seeds, and mix them together. Add the quark water and stir well to form a fairly thick dough. Now, drop small portions of the chocolate onto the sesame and psyllium husk mixture by the spoonful; a second spoon is very helpful. Roll the portions into simple balls. The important thing is not so much the shape, but that the sesame and psyllium mixture adheres to all sides of the chocolate balls. Place the balls in the refrigerator for at least 3 hours and let them set. If you like, you can now roll the cool balls with your hands to perfect them. You can also pop them straight into your mouth! Dried fruit, other nuts, vanilla and rum flavorings, or anything else you can think of can also be used as variations. Low in carbohydrates, but enough calories!
