Peach soup with basil

Ingredients for 4 servings:

  • 2 kg peach(s), ripe
  • 1 bunch basil, fresh, roughly chopped
  • 1 cup wine, white, dry
  • Sea salt, coarse
  • pepper, black
  • Sugar
  • Cayenne pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Peel and slice the peaches, add the white wine, and blend until smooth, adding more white wine if desired. Season with salt, pepper, sugar, and cayenne pepper to taste. Place in the freezer and let it cool completely; do not freeze! Sprinkle the chopped basil on top just before serving. A delicious appetizer for hot summer days.
