Gazpacho – Sorbet

Ingredients for 4 servings:

  • 500 g tomatoes
  • 600 ml water
  • 4 spring onions, finely diced
  • 2 stalk(s) celery, finely diced
  • 1 bell pepper(s), red, finely diced
  • 1 garlic clove(s), crushed
  • 1 tbsp tomato paste
  • 1 tbsp parsley, chopped
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Pour boiling water over the tomatoes, let them steep briefly, then peel them. Halve them, remove the seeds, and finely dice them. Place them in a blender with the remaining ingredients, blend everything, and transfer them to a freezer-safe container. Whisk every 30 minutes until the mixture is completely frozen. Remove from the freezer about 15 minutes before eating and let it thaw slightly. Serve over iceberg lettuce and with breadsticks.
