Marinated zucchini and feta rolls

Ingredients for 4 servings:

  • 2 small zucchini
  • some rapeseed oil for frying
  • 250 g feta cheese
  • 3 garlic cloves
  • 4 tbsp herb mix, frozen e.g. 6-herb mix
  • e.g. chili pepper(s), fresh
  • 4 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • salt and pepper

Instructions

Working time approx. 40 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 5 minutes; Total time approx. 4 hours 45 minutes

Wash the zucchini and peel it lengthwise into thin strips using a vegetable peeler. Fry the strips in a little oil in a pan, grill them in the oven, or deep-fry them in an air fryer until lightly browned. Then let the zucchini cool. In the meantime, dice the feta cheese and wrap it in the zucchini strips. Secure the strips with a toothpick and place the rolls in a shallow dish or container. For the marinade, finely chop the garlic and finely chop the chili pepper. Mix both with the remaining ingredients and spread over the zucchini and feta rolls. Cover and refrigerate for at least 4 hours. The rolls can be prepared well in advance and taste even better the longer they marinate.
