Ingredients for 1 servings:

  • 400 g kohlrabi
  • 50 ml water
  • 1 tsp vegetable broth
  • 1 tsp mustard
  • some parsley
  • some salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Wash and peel the kohlrabi. It’s best to halve it and then cut it into thin 1-2 mm thick slices. Now cut the slices into the desired size. Cook the kohlrabi slices in boiling salted water for about 10-15 minutes, depending on the thickness of the slices. I like them to be slightly firm to the bite. Drain the slices well and prepare the dressing. To make the dressing, mix the water, vegetable stock, mustard, and parsley well. Place the slices in a bowl and toss with the dressing. Let everything sit for a while and then season with salt and pepper if desired. The kohlrabi slices naturally don’t absorb the liquid quite as well as potatoes.
