Cauliflower gratin with bacon

Ingredients for 2 servings:

  • 1 cauliflower
  • 125g bacon
  • 2 tbsp butter
  • 2 tbsp flour
  • 400 ml milk
  • 75 g Cheddar cheese, grated
  • 1 tsp salt
  • pepper
  • 2 tbsp mustard, hot
  • 1 tbsp lemon juice
  • 50 g blue cheese
  • 2 tbsp breadcrumbs

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Clean and wash the cauliflower, divide it into florets, and cook them until al dente. Cut the bacon into pieces and fry in a pan without fat until golden brown. Then drain on kitchen paper. Preheat the oven to 180°C (top/bottom heat). Melt 2 tablespoons of butter in a saucepan. Add 2 tablespoons of flour and stir with a whisk. Toast for 2-3 minutes, stirring frequently, then add 400ml of milk in small portions. Always stir the mixture until smooth before adding more milk. Once all the milk is in the pan, simmer gently over low heat. Add 1 teaspoon of salt and a generous grind of black pepper, then stir in 2 tablespoons of hot mustard (preferably coarse-grained) and 1 tablespoon of lemon juice. Grate 75g of Cheddar cheese and melt it into the sauce while stirring. Place the drained cauliflower florets in a baking dish. Spread the bacon over the top. Then pour the cheese sauce over the cauliflower. Distribute 50g of blue cheese in small pieces on the florets and sprinkle with 2 tablespoons of breadcrumbs. Bake in the oven for 20 minutes.
