Low-carb 'Labskaus'

Ingredients for 2 servings:

  • 1 cauliflower
  • 1 can of corned beef
  • 1 onion(s)
  • 1 jar of pickles
  • 1 jar beetroot
  • 2 eggs
  • Salt

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 5 minutes

Potato replacement with cauliflower

Remove the stalks from the cauliflower and boil in lightly salted water until the cauliflower is al dente. Meanwhile, chop the onions and some of the gherkins into small pieces. Drain the cooked cauliflower thoroughly. Meanwhile, lightly sauté the onions, gherkins, and corned beef in a saucepan and deglaze with a little liquid from the pickle jar. Puree the cauliflower with an immersion blender and then add it to the corned beef mixture. Then add a little beetroot juice from the jar and season with salt, pepper, and possibly a little more of the pickle liquid. Meanwhile, fry one fried egg per person in a pan. Place the Labskaus on plates, add a few gherkins and beetroot, and place the fried egg on top. If you like, you can of course also serve it with fish.
