Tofu Stroganoff

Ingredients for 4 servings:

  • 300g tofu
  • 4 tbsp soy sauce
  • 1 vegetable onion(s), in rings
  • 400 g mushrooms, brown, cleaned, sliced
  • 3 tbsp butter
  • 2 tbsp oil
  • 1 garlic clove(s), squeezed
  • 3 tbsp tomato paste
  • ⅛ liter red wine, dry
  • 200 ml cream
  • 1 tbsp basil, chopped
  • ½ tsp salt
  • pepper, black

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Slice the tofu and marinate briefly in the soy sauce. Slowly sauté the onion and mushrooms in the butter until soft, then set aside. Heat the oil in a roasting pan and sear the drained tofu slices. Add the garlic, mushrooms, and onion. Mix the remaining ingredients and add. Bring everything to a gentle boil. Stir everything very carefully and season to taste. This goes wonderfully with green tagliatelle and tomato salad.
