Ingredients for 4 servings:

  • 600 g parsnip(s)
  • 50 g butter
  • 250 ml whipped cream
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Peel the parsnips and cut into 0.5 cm thick slices. Cook in boiling salted water over medium heat for 2-3 minutes. Drain the water, add the butter and cream to the parsnips, and cook over medium heat for 5-8 minutes until soft. Remove from the heat and puree very finely with an immersion blender. Season with salt, pepper, and a pinch of nutmeg. Tip: Alternatively, you can also use parsley roots.
