Plum cake without eggs

Ingredients for 1 servings:

  • 125 ml milk
  • 50 g margarine
  • 10 g yeast
  • 50 g sugar
  • 1 packet of vanilla sugar
  • 200 g flour
  • 1 pinch of salt
  • 1 kg plum(s), pitted weighed

Instructions

Working time approx. 30 minutes; Rest time approx. 45 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 40 minutes

Heat the milk and margarine until the margarine has melted. Stir in the yeast until dissolved. Combine all other dough ingredients in a mixing bowl. Add the milk, margarine, and yeast mixture and knead everything into a yeast dough. Cover and let it rise in a warm place. In the meantime, wash and pit the plums. When the dough has roughly doubled in size, roll it out thinly on a prepared baking tray (fruit pie tray) and top with the plums. Let everything rise for another 10 minutes. In the meantime, preheat the oven to 180°C fan/convection oven or 200°C conventional oven. Bake the cake on the middle rack for about 25 minutes.
