Ingredients for 1 servings:

  • 125 g butter, room temperature
  • 125 g sugar
  • 1 packet of vanilla sugar
  • 2 eggs
  • 175 g flour
  • 1 tsp, leveled baking powder
  • 100 g almond(s), unpeeled, ground
  • 750 g plum(s), pitted, halved
  • Sugar, for sprinkling

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 30 minutes

Simple, quick cake for a springform pan

Preheat oven to 175°C (350°F), including fan-assisted oven. Combine the ingredients for the batter and make a sponge mixture. Line a 26 cm springform pan with baking paper, squeezing the edges into the paper. If it’s not a coated pan, grease it. Pour in the batter and smooth it out. Place the plum halves, pointing upwards, into the batter, tightly packed. Wrap the bottom of the springform pan with aluminum foil for safety (spilled fruit juices are the worst thing for the oven. Make sure the non-reflective side of the foil is facing out). Bake for approximately 70 minutes on the second rack from the bottom. Sprinkle with sugar before serving.
