Vegan mushroom patties

Ingredients for 4 servings:

  • 70 g peanuts
  • 2 onions
  • 300 g mushrooms
  • 200g tofu
  • 2 tbsp olive oil
  • 2 tbsp soy flour
  • 150 g oat flakes
  • salt and pepper
  • 1 tbsp vegetable stock powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Grind the peanuts in a food processor. Add the onions, mushrooms, and tofu and chop well. Sauté the mixture in a pan with olive oil. Combine the soy flour with 4 tablespoons of water and add it to the mushroom mixture along with the oatmeal. Knead with your hands and form into patties. Then fry on both sides in a pan with oil.
